day 7

wrapping up a full week of clean eating!

we left san diego at around 8:30am so less meals, more snacking.

snacks:

roasted chickpeas with smoky chili and lime flavors...ehhh....

was very close to shoving a pandesal in my mouth that mom had packed for us, but refrained after ryan's reaction. instead i snacked on toasted coconut chips.

appropriately named if i might add.

lunch:

the 7-layer burrito from taco bell, minus the cheese and sour cream. thank goodness for the peta website for listing fast food vegan options!

when we got home, i whipped myself a smoothie, knowing i wasn't close to meeting my goal of servings of fruits and veggies.


1 1/2 cup spinach
1/2 cup kale
1 banana
1/2 fuji apple
1 cup water
3 ice cubes
delish!

dinner:

my "spaghetti" leftovers from wednesday
roasted cabbage wedges (currently mine and ry's favorite side dish)

dessert:

whipping up the batter, i must say i really enjoyed the flavor of this vegan chocolate cake recipe. maybe the oven was too hot, or i left it in too long, but not pleased with the outcome. waste of caloric and sugar intake if you ask me. however, it is good to know that cocoa powder does not contain any animal products and that applesauce is an easy substitue to use in baking.

exercise:
35 minutes elliptical machine
